Easy unicorn cupcake recipe
There is nothing better to lift the mood than cake, so we've created a simple unicorn cupcake recipe for you to do at home! Unicorns represent positivity, fun and happiness, and during this time we need a bit of a pick me up! So, get involved, bake some cakes and stay positive!

Ingredients
- 200g soft butter
- 200g caster sugar
- 4 eggs
- 200g Self-raising flour
- 2tbsp milk
- 6 drops vanilla extract
- 12 Cupcake cases
For the ears and horn:
- White mini marshmallows
- Birthday candles
For the Buttercream:
- 150g soft butter
- 340g icing sugar
- 2tbsp milk
Decorations (optional)
- Sprinkles
- Edible glitter
Method:
Cakes:
- Preheat the oven to 180oC degrees.
- Place cupcake cases in the 12-hole Cupcake tin.
- Place the butter and caster sugar into the bowl and mix together for 5 minutes or until the butter and sugar are pale and creamy.
- Add the eggs one at a time
- Next sift the flour and mix it all together thoroughly to ensure no curdling
- Add the milk and vanilla extract into the bowl and mix until all ingredients are combined.
- Separate the mixture equally into the cupcake cases. Bake in the middle of the pre-heated oven for 15 - 20 minutes or until a skewer inserted into the middle of the cakes comes out clean.
- Once cooked place the cupcakes on a cooling rack to cool.
Icing:
- Cut 12 mini marshmallows in half diagonally with scissors to make the ears for your cupcakes
- For the buttercream – put the butter, icing sugar and milk into a bowl and mix until combined together and pale in colour.
- If you have a piping bag excellent! If not take a freezer bag and cut off the corner. Place the buttercream into the bag and use this as a piping bag to pipe your icing onto your cupcakes.
- Add your marshmallow ears and unicorn horns (birthday candles) onto your cupcakes and add any other decorations e.g. sprinkles or spray with edible glitter
- You’re all done! They are ready to eat!
